Thinkature
I have to be honest and say I wasn't too impressed with this tool. Perhaps it is because we don't have enough computer access (yet, :)) to be an effective tool. I would still use just regular mapping tools/papers I have at my disposal for my class. However, it may be fun and an interesting twist for the students to use as a demonstration tool when teaching mapping or a certain topic. I just don't know if I will use this often.

I have never actually been successful using Thinkature as a real-time tool, the way it's designed to be used. I've tried, but the site stalls or fails altogether and I get frustrated. What I find interesting is the idea of doing an online collaborative mind map, where several users can have their input. I'm still searching for the perfect tool to make that work in a classroom setting.
Even with one computer this tool (if it worked, or one like it that did) would be useful if you had a wireless keyboard/mouse. These could be handed around the room while brainstorming and the students could manipulate what was being projected on the overhead.
Poison Shirt - If you haven't already found something, I have been very successful with using Mind42 (www.mind42.com) as a collaborative mind mapping tool. I used it in a virtual forum where representatives from 10 countries were able to share their ideas instantly.
